This easy and healthy keto carrot cake recipe is moist and fluffy on the inside and tender on the outside, it’s perfect for breakfast too! Made with almond flour and coconut flour, this low carb carrot cake comes with a vegan and eggless option!

INGREDIENTS
Healthy Keto Low Carb Carrot Cake Recipe

  • 1 1/4 cups blanched almond flour
  • 1/2 cup tapioca flour
  • 2 tbsp coconut flour
  • 1 tsp baking soda
  • 1/2 cup granulated sweetener of choice
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/3 cup olive oil can sub for vegetable or canola oil
  • 1 tsp almond extract can sub for vanilla extract
  • 2 large eggs
  • 2 medium bananas, overripe
  • 1 1/2 cups shredded carrots Approximately 3 large carrots

Healthy Vegan and Eggless Carrot Cake Option (Banana-free)

  • 1 1/4 cups gluten free flour sifted
  • 1 1/4 cups blanched almond flour
  • 1/4 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1 medium carrot, shredded
  • 1/3 cup chopped walnuts
  • 2 tbsp unsweetened shredded coconut
  • 1 tbsp apple cider vinegar
  • 3/4 cup milk of choice
  • 1/4 cup olive oil can sub for vegetable or canola oil
  • 1/2 cup pure maple syrup * See notes
